How to Work Out Turkey Size

The whole thing turns on one fact people find surprising: a whole turkey is only about 45% edible meat. Bone, skin, cavity and moisture loss take the rest. That's why the planning number sounds so generous.

  1. Start at 1 lb of whole turkey per adult, counting kids under 12 as half. That lands near a 7 oz serving with modest leftovers.
  2. Adjust for how you eat: 0.75 lb if the table is groaning with sides and nobody wants leftovers; 1.5 lb if the leftovers are the point.
  3. Buy the next size up. Turkeys don't come in exact weights, and the gap between "enough" and "plenty" is a couple of dollars.
  4. Work backwards from dinner — thaw time is the deadline that actually catches people out, not roasting time.

Worked example — 10 adults + 2 kids, some leftovers: (10 + 1) × 1 lb = 11 lb turkey, about 5 lb of carved meat, 3 days of fridge thawing, and 2¾–3 hours in a 325°F oven unstuffed.

How many pounds of turkey per person?

1 lb per adult for the meal plus modest leftovers; 0.75 lb with lots of sides, 1.5 lb if you want sandwiches all weekend. Kids under 12 count as half.

What size turkey for 10 people?

A 10–12 lb bird, yielding roughly 4.5 lb of carved meat.

How long to thaw a turkey?

24 hours per 4–5 lb in the fridge. Cold water is 30 min per pound with a water change every 30 minutes. Never on the counter.

How long to cook a turkey at 325°F?

About 3–3¾ hr for 12–14 lb unstuffed, 3¾–4¼ hr for 14–18 lb. Stuffed adds ~30 min. Cook to temperature, not time.
